Is it safe to reuse a copper bottom lined stainless steel pot that burned by boiling water for too long?
I was boiling water and forgot that I was boiling water. When I remembered, the water boiled dry and the copper has burned away (gray and faded orange on the bottom that's easily wiped off) and the bottom inside of the pot has rings and spirals of gray/black. Should I throw the pot away or can I reuse it? I'm primarily concerned about toxins.
It’s probably best to throw it away and get a fresh one. In the future, you should try to be more careful, as copper pots are expensive to replace and this was a very preventable accident.
In terms of the quality of anything that you might try to cook in the pot, you will likely encounter at least some type of burnt taste from the pot, especially if the burn penetrated all the way through to the inside surface.
As for safety, the primary concern would be whether or not the copper in the pot that is left is more or less likely to dissolve in water. The human body doesn’t need copper and can deal with it in certain amounts. Once you get past that stage, you can start to develop copper poisoning, which can be harmful. This is why you should avoid putting vinegar in unlined copper, as copper acetate can form from the acidic vinegar. This is also why some other foods shouldn’t be used in bare copper utensils, as copper-based compounds can form. I am not now nor have I ever claimed to be a chemist, but you have might have chemically altered some of the copper by scorching it. Despite this, it’s likely that the copper that remains intact might be more prone to leach off into foods from now on.
You should probably just chalk this one up to experience and replace the pot just to be on the safe side. Even if the pan is safe from a chemical standpoint, it probably will give off at least some burnt qualities to the food cooked in it. The there is also the problem of trace (emphasis on TRACE) amounts of whatever was in the water at the time it was boiling.
