Chamber Charcoal Grill
Do you need to have charcoal in the grilling chamber on a smoker to keep a constant temperature?
We have a Chargriller with a side fire box. Should there only be charcoal in the fire box?
If you're cooking low and slow for indirect heat, then no need to put charcoal in the main chamber. It's great for smoking and cooking barbecue style. I have at times added 1 or 2 hot coals to the main chamber to help keep the temp up, but that was more of an experiment.
If you're using your grill for grilling, high heat over direct heat, then go ahead and put the coals in the main chamber. I'd still leave an area to the side with only a couple coals so that area is more of a warming area where you can keep food slowly cooking.
